Banana Berry Protein Muffins

Serves 6 - 8


INGREDIENTS

2 cups Oat Flour

2 serves (4.5 scoops) Nuzest Pea Protein Vanilla

1/2 tsp Baking Soda

2 Rows Lindt 70-95% Dark Chocolate, chopped

2 tsp Cinnamon

2 Banana's, mashed

2 Eggs

1/4 cup Honey, liquid

1/4 cup Peanut Butter

1 tsp Vanilla Essence

1/2 cup Blueberries


METHOD

  1. In a bowl, mix oat flour, protein, baking soda, dark chocolate and cinnamon together.

  2. In a separate bowl add mashed bananas, eggs, honey, vanilla essence and peanut butter and mix.

  3. Combine the wet and dry ingredients together. Add blueberries.

  4. Spoon mixture into greased muffin tray.

  5. Sprinkle muffins with "Toppings" - Granola, nuts, seeds etc

  6. Bake for 120 minutes at 180 degrees
