Cranberry and Quinoa Energy Bars

INGREDIENTS:
1/2 c Slivered almonds, roughly chopped
1/2 c Cashews, roughly chopped
1/2 c Quinoa
1/2 c pumpkin seeds
1 c reduced-sugar dried cranberries (can be swapped for dried apricots, chopped)
2 Tbsp honey
METHOD:
preheat oven to 190 degrees on bake. Line a 20cm square slice tin with baking paper. Line a large baking tray with baking paper.
Place almonds, cashews, and pumpkin seeds on prepared tray and bake for 8-10mins or until golden brown. Transfer nut mixture to a large bowl and leave to cool.
Place cranberries (or apricots) and honey in a small food processor with 3 tablespoons water; blend until smooth. Add cranberry paste to cool nut mixture and stir together.
Press the mixture into prepared slice tin, bake for 30-35mins or until set. Remove slice from oven; leave to cool completely in tin.
Remove slice from tin, cut into 12 bars and wrap individually.
