Meatball Couscous Salad

Serves 4

Time: 20minutes


  • 500g lean beef meatballs (or make your own)

  • 1 c Wholemeal couscous

  • 1 bunch parsely, chopped

  • Juice of 1 lemon

  • 1 red onion, chopped (optional)

  • 1 tsp lemon rind, chopped

  • 8 cups mixed salad leaves

  • 1 punnet cherry tomatoes (250g), halved

  • 1/2 c Hummus


  1. Spray a large non stick pan with olive oil spray and heat to medium-high heat. Cook meatballs for 15mins or until golden brown and cooked through.

  2. Meanwhile, cook couscous according to the packet instructions, then fluff grains with a fork. Add parsley, lemon juice and rind, red onion. Season with salt and pepper, stir to combine.

  3. Divide salad leaves among four serving dishes. Top with parsley, couscous, cherry tomatoes and meatballs. Thin out the hummus by stirring with 1/4 cup water in small bowl .

  4. Drizzle hummus over salad and serve.
